Maple-Pumpkin Pancakes
Several years ago, we made and tasted MULTIPLE pumpkin pancake recipes, until we found/created the pumpkin pancakes of our dreams: texture, moisture, pumpkin-y, spicy, no weird ingredients... This is a favorite at our house this time of year, and worth the effort if we are able to get up a few minutes before the kids on a weekend morning.
3/4 cup old fashioned oats
1 1/2 cups milk
2 eggs, slightly beaten
3/4 cup cooked, mashed pumpkin
3 T maple syrup
1 T oil
1 1/4 cup flour
2 t baking powder
1/2 t salt
3/4 t cinnamon
1/8 t allspice
1/8 t nutmeg
1. Combine oats and milk and let stand 30 minutes.
2. Add eggs, pumpkin, syrup, oil to oats and stir well
3. Combine flour, baking powder, salt, spices in a large bowl.
4. Make a dent in the flour and add the oat mixture.
5. Stir just until moistened
6. Cook 1/4 cup batter at a time in butter on a hot griddle. Turn pancakes when tops are bubbly and edges are cooked.
7. Keep cooked pancakes warm in a 200 degree oven, wrapped in foil. Serve with more maple syrup.
